The spiciness and taste of these lamb meatballs, very typical in the Middle East, are perfectly balanced by the freshness of a yogurt and cucumber sauce aside. Yummy!
Ingredients (for 2)
- 1 1/2 cup ground lamb
- 1/2 cucumber
- 1/2 cup white yogurt
- 2 tsp cumin seeds
- 2 tbsp fresh coriander / cilantro
- 1 tbsp lemon juice
- 1 tbsp vegetable oil
- 1 tbsp parsley
- 1 tsp ginger
- 1 garlic clove
- salt & black pepper
Directions
- Soak some wooden skewers in hot water for a few minutes
- In the meantime, take a small bowl and mix the yogurt with extremely finely diced cucumber
- Sprinkle with some lemon juice and set aside
- In a large bowl, stir to combine the minced lamb with the fresh chopped coriander, parsley, cumin, minced garlic, salt, and black pepper
- Wet your hands with some water and start to roll with your hand about 2 tbsp of the mixture into a sausage shape
- When you have shaped all meat in koftas, carefully push a soaked skewer lengthways into each kofta
- Take a grill pan and gently brush it with some oil (you can soak a bit of paper with the oil and then gently rub the grill)
- Heat the grill pan at high temperature and cook the koftas, turning frequently, for about 8 minutes for slightly rare, or 10 minutes for well done
- Serve hot with some yogurt cream aside!

- Be sure to use white non sweet yogurt
- Try to cook your koftas on the barbecue and your Sundays will never be the same again!
