Ingredients (for 2)
- 2 onions
- 2 cups beef stock
- 1/3 cup gruyere cheese
- 1/2 cup croutons
- 1/4 tbsp white sugar
- 1/4 cup red wine
- 4 tbsp olive oil
- 1/2 tbsp bay leaves
- 1/2 tsp thyme
- salt & black pepper
Directions
- Preheat the oven to 220 C° (425 F°) or use the grill function
- In the meantime, heat olive oil in a deep saucepan and cook the onions (chopped or diced to your personal taste) for about 10 minutes, stirring frequently
- Add red wine, sugar, thyme, bay leaves and a pinch of salt, and let the onions caramelize at low heat until golden brown
- Discard the bay leaves, heat the beef stock and add it to the onions
- Ladle the soup in a safe-oven bowl, add croutons on top and the gruyere cheese
- Season with black pepper and bake until cheese is melted
