French Onion Soup

A French staple, popular all over the world! For best results make your own Croutons (check out our Ingredients section for a great recipe)

Ingredients (for 2)

  • 2 onions
  • 2 cups beef stock
  • 1/3 cup gruyere cheese
  • 1/2 cup croutons
  • 1/4 tbsp white sugar
  • 1/4 cup red wine
  • 4 tbsp olive oil
  • 1/2 tbsp bay leaves
  • 1/2 tsp thyme
  • salt & black pepper

Directions

  • Preheat the oven to 220 C° (425 F°) or use the grill function
  • In the meantime, heat olive oil in a deep saucepan and cook the onions (chopped or diced to your personal taste) for about 10 minutes, stirring frequently
  • Add red wine, sugar, thyme, bay leaves and a pinch of salt, and let the onions caramelize at low heat until golden brown
  • Discard the bay leaves, heat the beef stock and add it to the onions
  • Ladle the soup in a safe-oven bowl, add croutons on top and the gruyere cheese
  • Season with black pepper and bake until cheese is melted
