The Ultimate Southern Fried Chicken

Fried chicken is a Southern classic, popular all over the world. Everyone has his own custom recipe, someone even keeps it secret! This version is very easy but simply delicious, we guarantee you won’t need another one…

Ingredients (for 2)

  • 4 chicken thighs
  • 2 chicken wings
  • 1 cup wheat flour
  • 1/4 cup cornstarch
  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 cup milk
  • 2 eggs
  • 2 cups oil for frying
  • salt
  • red & black pepper

Directions

  • Take a large bowl and beat the eggs with milk and salt; mix well to combine
  • Add the chicken and coat it well with the egg mixture
  • Reserve aside and let marinate for at least 20 minutes (the more the better)
  • Take a large flat dish, add the flour, cornstarch, salt, smoked paprika, oregano, ground red pepper and black pepper, and mix to combine
  • Heat the oil for frying in your pan (if you have a kitchen thermometer, the right temperature would be 340-350°F or 170-180°C)
  • Remove the chicken pieces from the bowl, one at a time, and let the excess mixture drip off into the bowl
  • Coat thoroughly the chicken in the flour and spices mixture, and set aside
  • When ready, add the chicken (a few pieces at a time) to the frying pan
  • Lower the heat and simmer in oil covered for 6-7 minutes per side
  • Then turn up the heat and fry the chicken, uncovered, until golden brown and cooked through
  • Remove with a slotted spoon, place on kitchen paper to absorb any excess oil and serve immediately!

The secret for a perfect fried chicken is to cook it through without burning the batter: to do that, let it simmer at low heat for a few minutes, stirring from time to time (covered), then increase the heat to make it nice and crispy!
