Possibly the most popular Italian dessert! Very easy and fun to prepare. Be creative with the layout (biscuits dipped in a cream-filled Martini glass?) and add a touch of rum or Marsala wine to the coffee if you like a stronger flavor. For best results you should use Savoiardi biscuits, extremely fresh eggs and espresso coffee.
Ingredients (for 2)
- 1 cup mascarpone cheese
- 1 cup biscuits
- 1/2 cup coffee
- 2 eggs
- 3 tbsp white sugar
- 1/4 cup chocolate chips
- 1/2 tbsp cocoa powder
Directions
- Beat the egg yolks with half of the sugar, add the mascarpone cheese and mix until smooth
- In a separate bowl whip the egg whites with the other half of the sugar with a mixer until fluffy
- Blend the two mixes together to get a nice creamy texture
- Take a flat container and lay out a layer of cream
- Dip the biscuits in the coffee and add a layer on top of the cream
- Repeat the steps, adding a layer of cream and a layer of biscuits until recipient is full (leave a layer of cream on top)
- Sprinkle with chocolate chips and cocoa powder and let it rest in the fridge for 2-3 hours until firm
