Chicken Liver Paté

The worldwide famous French pâté, made with chicken liver. Perfect as starter, spread on toasted bread or as side for a rich meat meal. Guaranteed to stun your guests!

Ingredients (for 2)

  • 1 cup chicken liver (about 180 gr or 6 oz)
  • 2 cups chicken stock
  • 1 egg
  • 1 tbsp butter
  • 1/2 onion
  • 1 tbsp brandy
  • salt & black pepper


  • Take a small sauce pan and add chicken livers and stock
  • Bring to a boil over medium heat
  • Reduce heat and simmer for 6-8 minutes
  • Remove chicken livers with a slotted spoon to an electric blender and blend until smooth, reserving cooking liquid
  • Thinly grate onions and sauté in a skillet with butter for 4 minutes, or until translucent
  • Add onions, ½ of the liquid from the saucepan, brandy and eggs to the blender
  • Season with salt and black pepper and mix well until smooth
  • Spread evenly on toasted bread and serve
