Sushi Rice

Sushi rice can be used for the preparation of nighiri, maki, gunkan and any type of sushi rolls!

Ingredients (for 2)

  • 1 cup white rice
  • 3 tbsp rice vinegar
  • 1 tbsp white sugar
  • 2 cups water
  • salt


  • Put the rice in a bowl, add running water and wash it gently until water becomes white
  • Change water and repeat 2 more times or until water is clear
  • Place the rice in a heavy pot, add water as indicated in the Ingredients table and let it soak for 20 minutes
  • Turn on the heat at medium, cover with a lid and cook for about 15 minutes or until all water has been absorbed
  • In the meantime, mix rice vinegar, sugar and salt in a small bowl
  • Turn off the heat, put the hot rice in a large bowl, and stir the vinegar mixture into the rice
  • Fluff the rice with a spatula and let cool for 10 minutes before use

Tips from the Chef

  • If rice vinegar is not available use aromatic apple vinegar
