Sushi rice can be used for the preparation of nighiri, maki, gunkan and any type of sushi rolls!
Ingredients (for 2)
- 1 cup white rice
- 3 tbsp rice vinegar
- 1 tbsp white sugar
- 2 cups water
- salt
Directions
- Put the rice in a bowl, add running water and wash it gently until water becomes white
- Change water and repeat 2 more times or until water is clear
- Place the rice in a heavy pot, add water as indicated in the Ingredients table and let it soak for 20 minutes
- Turn on the heat at medium, cover with a lid and cook for about 15 minutes or until all water has been absorbed
- In the meantime, mix rice vinegar, sugar and salt in a small bowl
- Turn off the heat, put the hot rice in a large bowl, and stir the vinegar mixture into the rice
- Fluff the rice with a spatula and let cool for 10 minutes before use

- If rice vinegar is not available use aromatic apple vinegar
