Yakitori Chicken Skewers

One of the most famous and delicious recipes from Japan: grilled chicken skewers with teriyaki sauce. Can be used as appetizer as well as main course!

Ingredients (for 2)

  • 2 chicken thighs
  • 1 leek
  • 1 tbsp sake
  • 1 tbsp mirin
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1 tbsp white sugar
  • a pinch of salt

Directions

  • First off prepare the teriyaki sauce: put the soy sauce, sake and mirin in a saucepan and heat gently
  • Add the sugar in small quantities and stir frequently
  • Simmer for 5-6 minutes, until the sauce gets thicker and the sugar has fully dissolved, and set aside to cool
  • In the meantime, debone the chicken thighs
  • Chop the chicken and leeks in bite-sized pieces, season with salt and thread alternately onto the skewers
  • Grill the chicken skewers on a barbeque or in a skillet with vegetable oil for 5-10 minutes, until browned on all sides
  • Arrange them on your serving platter, pour the sauce on top and serve immediately!

Tips from the Chef

  • You can use any part of the chicken: from breast to thighs to even liver
  • Soak bamboo skewers in water for a few minutes to prevent burning
