One of the most famous and delicious recipes from Japan: grilled chicken skewers with teriyaki sauce. Can be used as appetizer as well as main course!
Ingredients (for 2)
- 2 chicken thighs
- 1 leek
- 1 tbsp sake
- 1 tbsp mirin
- 2 tbsp vegetable oil
- 2 tbsp soy sauce
- 1 tbsp white sugar
- a pinch of salt
Directions
- First off prepare the teriyaki sauce: put the soy sauce, sake and mirin in a saucepan and heat gently
- Add the sugar in small quantities and stir frequently
- Simmer for 5-6 minutes, until the sauce gets thicker and the sugar has fully dissolved, and set aside to cool
- In the meantime, debone the chicken thighs
- Chop the chicken and leeks in bite-sized pieces, season with salt and thread alternately onto the skewers
- Grill the chicken skewers on a barbeque or in a skillet with vegetable oil for 5-10 minutes, until browned on all sides
- Arrange them on your serving platter, pour the sauce on top and serve immediately!

- You can use any part of the chicken: from breast to thighs to even liver
- Soak bamboo skewers in water for a few minutes to prevent burning
