Ingredients (for 2)
- 8 cherry or plum tomatoes
- 1/2 can tuna
- 4 anchovies fillets
- 1 tsp capers
- 2 tbsp fresh cheese
- 1 tbsp basil
- 2 tbsp olive oil
Directions
- Wash and cut in two the tomatoes (about 1/4 below the top)
- Carefully scoop out the seeds and the pulp and reserve into a small bowl
- Add to the bowl the tuna fish (drained from its oil or water), cheese and olive oil; smash to combine with a fork
- Finely chop the canned anchovies (drained from oil), capers and fresh basil and add them to the bowl; stir to combine all the ingredients into an even mixture
- Fill the tomatoes with the mixture and refrigerate for a few minutes before serving!

- If using salted capers wash them before chopping
- You can also use medium-sized red tomatoes and serve as a main course!
