Tuna Stuffed Red Tomatoes

A super delicious and cool appetizer ready in just a few minutes and with no cooking! Ideal for your hot summer meals or parties…

Ingredients (for 2)

  • 8 cherry or plum tomatoes
  • 1/2 can tuna
  • 4 anchovies fillets
  • 1 tsp capers
  • 2 tbsp fresh cheese
  • 1 tbsp basil
  • 2 tbsp olive oil


  • Wash and cut in two the tomatoes (about 1/4 below the top)
  • Carefully scoop out the seeds and the pulp and reserve into a small bowl
  • Add to the bowl the tuna fish (drained from its oil or water), cheese and olive oil; smash to combine with a fork
  • Finely chop the canned anchovies (drained from oil), capers and fresh basil and add them to the bowl; stir to combine all the ingredients into an even mixture
  • Fill the tomatoes with the mixture and refrigerate for a few minutes before serving!

  • If using salted capers wash them before chopping
  • You can also use medium-sized red tomatoes and serve as a main course!
