Trout with Herbs

Ingredients (for 2)

  • 4 fillets trout (about 11 oz or 320 gr)
  • 1 tbsp mint
  • 1 tbsp rosemary
  • 1 tbsp parsley
  • 1 tsp marjoram
  • 1 tsp thyme
  • 1 garlic clove
  • 1 tbsp lemon juice
  • 4 tbsp olive oil
  • salt & black pepper


  • Preheat the oven to 200°C (400° F)
  • In a bowl mix all the herbs together and add some olive oil and minced garlic
  • Grease the bottom of a baking pan with the remaining olive oil (you can use parchment paper instead)
  • Add the trout fillets skin down and season with salt and black pepper
  • Spread the herbs mixture over the fish and drizzle some olive oil on top
  • Broil for 10 minutes, then turn over and cook for 5 minutes more
  • Serve hot with some lemon juice on top!
