Ingredients (for 2)
- 4 fillets trout (about 11 oz or 320 gr)
- 1 tbsp mint
- 1 tbsp rosemary
- 1 tbsp parsley
- 1 tsp marjoram
- 1 tsp thyme
- 1 garlic clove
- 1 tbsp lemon juice
- 4 tbsp olive oil
- salt & black pepper
Directions
- Preheat the oven to 200°C (400° F)
- In a bowl mix all the herbs together and add some olive oil and minced garlic
- Grease the bottom of a baking pan with the remaining olive oil (you can use parchment paper instead)
- Add the trout fillets skin down and season with salt and black pepper
- Spread the herbs mixture over the fish and drizzle some olive oil on top
- Broil for 10 minutes, then turn over and cook for 5 minutes more
- Serve hot with some lemon juice on top!
