A delicious lemon sauce perfectly coats a broiled trout with toasted almonds. Not your usual trout recipe!
Ingredients (for 2)
- 4 fillets trout
- 1/3 cup almonds
- 2 tbsp lemon juice
- 4 tbsp olive oil
- 1 tbsp fresh parsley
- salt & black pepper
Directions
- Preheat the oven to 200°C (400° F)
- On a parchment paper bake the almonds (sliced) until golden brown (4-5 minutes); remove from oven and reserve aside
- In the meantime, grease the bottom of a baking pan with olive oil
- Add the trout fillets skin down and season with salt and black pepper
- Broil for 10 minutes, then turn over and cook for 5 minutes more
- Remove the fish from the oven and place on a serving platter
- Sprinkle the trout with the toasted almonds
- In a small sauce pan, heat the remaining olive oil, lemon juice and finely chopped parsley
- Bring to boil and then pour over the fish and your trout is ready to be served!
