Trout with Almonds and Lemon Sauce

A delicious lemon sauce perfectly coats a broiled trout with toasted almonds. Not your usual trout recipe!

Ingredients (for 2)

  • 4 fillets trout
  • 1/3 cup almonds
  • 2 tbsp lemon juice
  • 4 tbsp olive oil
  • 1 tbsp fresh parsley
  • salt & black pepper


  • Preheat the oven to 200°C (400° F)
  • On a parchment paper bake the almonds (sliced) until golden brown (4-5 minutes); remove from oven and reserve aside
  • In the meantime, grease the bottom of a baking pan with olive oil
  • Add the trout fillets skin down and season with salt and black pepper
  • Broil for 10 minutes, then turn over and cook for 5 minutes more
  • Remove the fish from the oven and place on a serving platter
  • Sprinkle the trout with the toasted almonds
  • In a small sauce pan, heat the remaining olive oil, lemon juice and finely chopped parsley
  • Bring to boil and then pour over the fish and your trout is ready to be served!
