Probably the most popular Thai soup, hot, hearty and ready in just half an hour! Real easy to prepare…
Ingredients (for 2)
- 1 cup prawns
- 1/2 cup tomato sauce
- 1/2 cup coconut milk
- 4 tbsp dried mushrooms
- 1 tbsp lemongrass
- 2 tbsp cilantro
- 1 tbsp fish sauce
- 1 lime
- 1 garlic clove
- 3 cups vegetable stock
- chili peppers as desired
Directions
- Put the vegetable stock for the soup in a pot, cover and bring to a boil
- In the meantime, chop and soak the mushrooms in cold water (at least 15 minutes)
- Peel and devein the shrimps and set them aside
- Chop the lemongrass and the chili peppers
- When the stock is boiling, add the mushrooms (drained), fish sauce, tomato sauce, coconut milk, lime juice, lemongrass and crushed garlic cloves
- Cook at medium heat for about 10 minutes
- Add the shrimps and the chili peppers, and cook for another 5 minutes
- Garnish with fresh cilantro leaves before serving
