This is an excellent recipe for leftover rice and reduces cooking time significantly. Feel free also to experiment by adding your favorite vegetables or mushrooms to the mix!
Ingredients (for 2)
- 1 cup basmati rice
- 2 chicken thighs
- 1/4 spring onion
- 1/4 chili pepper
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 1/2 tbsp brown sugar
- 2 tbsp olive oil
- 2 garlic cloves
- 1 tbsp fresh basil
- 1/2 tbsp rock salt
Directions
- If cooked rice is not available, boil fresh rice in salted water until almost done (1-2 minutes short of full cooking time)
- In the meantime, debone and chop the chicken thighs into bite-size pieces
- Drain the rice and set it aside
- Chop the spring onions, put them in a wok with olive oil and stir fry for a couple of minutes
- Add the garlic (crushed), soy sauce and chicken
- Stir fry at high heat until chicken is ready (about 5-6 minutes), stirring frequently
- Add the rice, fish sauce, brown sugar and chili peppers
- Mix thoroughly and cook for a couple of minutes
- Garnish with fresh basil leaves just before serving
