Tender Pork Chops in Brandy Sauce

One of the famous rich and creamy French sauces, made with brandy and sour cream, is the perfect match for tender and juicy pork chops!

Ingredients (for 2)

  • 2 large pork chops
  • 4 tbsp brandy
  • 4 tbsp sour cream
  • 2 shallots
  • 2 tbsp wheat flour
  • 2 tbsp olive oil
  • salt & pepper (as needed)


  • Trim pork chops and remove bones if any
  • Season meat with salt and black pepper
  • Put wheat flour on a large plate and dredge each pork chop in the flour, shaking off any excess
  • Take a frying pan or skillet and heat olive oil on medium high heat
  • When oil is hot, add the chops and cook for about 3 minutes per side
  • Remove from pan and reserve on a plate, covered
  • Slice shallots, add them to the pan and sauté for 2 minutes over medium heat
  • Add brandy, stir well and scrape any browned meat sticking on the bottom of the pan with a wooden spoon
  • When brandy is reduced by half, add sour cream and stir to combine
  • Pour the sauce over the pork chops and serve hot!
