A complete and rounded soup with a great balance of sweet (carrots and honey) and sour tastes (lemon, orange and yogurt). Many ingredients for a superb result!
Ingredients (for 2)
- 3 carrots
- 2 oranges
- 1/4 cup orange juice
- 1 garlic clove
- 1/2 onion
- 1 large potato
- 2 tbsp lemon juice
- 1/2 tbsp honey
- 1/4 cup white yogurt
- 1/2 tsp ginger
- 1/2 tbsp mint
- 1/4 tsp coriander seeds
- 1 cup vegetable stock
- 2 tbsp olive oil
- salt & black pepper
Directions
- Peel the oranges and chop them in pieces, saving all the juices
- Dice the onions and the potatoes, and coarsely chop the carrots and garlic
- Take a large saucepan and bring oil to high heat
- Add the diced onions and sauté until translucent
- Add the carrots and garlic, and sauté for additional 2 minutes
- Add the stock, diced potatoes, orange pieces and juice, ground coriander seeds, ginger, and honey, and bring to a boil
- Reduce heat to medium, cover, and simmer for 15 minutes
- When vegetables are done, pour into an electric blender and purée, adding more stock if necessary to obtain the desired consistency
- Add lemon juice and chopped fresh mint, and season with salt and black pepper
- Before serving, stir in the white yogurt (ideally Greek) and serve hot!

Tips from the Chef
- Add the yogurt only at the end, if it boils it will curdle! If you like a stronger flavor you can substitute the vegetable stock with chicken stock
