Strawberry and Marshmallow Cream Crepes

Ingredients (for 2)

  • 1 cup all-purpose flour
  • 1/2 cup milk
  • 1 egg
  • 1/2 cup strawberries
  • 1/2 cup whipping cream
  • 1/2 cup marshmallows
  • 1 tbsp butter
  • 1/2 tbsp white sugar
  • salt


  • Combine eggs and milk in a bowl using a whisk
  • Put sugar, salt and flour in another bowl and add milk mixture; stir to combine, cover and put in fridge for 1 hour
  • Heat skillet and melt butter then add about 3 tablespoons of crepe batter into middle of pot
  • Tilt pan to spread batter and cook until top looks dry then flip and cook for 15 seconds on other side (repeat for each crepe)
  • Put marshmallows into a heat resistant container and microwave for 30 seconds; stir and heat for another 30 seconds
  • Pulse lightly with a blender, add whipping cream and beat on high until fluffy and thick
  • Place marshmallow cream in center of crepe with chopped strawberries, roll and place on a plate
  • Top with cream and a sliced strawberry as shown in picture
