Ingredients (for 2)
- 2 fillets sea bass (about 250 gr. or 9 oz.)
- 4 cups fresh spinach
- 2 tbsp soy sauce
- 2 tsp ginger
- 2 tbsp mirin (or sake)

- 1/2 spring onion
Directions
- Take a small bowl and mix together the soy sauce, sesame oil and mirin (or sake)
- Add the ginger (peeled and grated), spring onion (finely sliced) and garlic (crushed); stir to combine
- Line the bamboo steamer with parchment paper or foil and place the fillets inside, skin side up, on the first tier (the one closer to the heat)
- Pour the sauce over the fish
- Put the spinach in the second tier, cover and place over simmering water
- Cook for about 8 minutes until fish is done and spinach is tender but still crunchy
- Arrange on the serving platter, pour the juices on top and enjoy!
Tips from the Chef
- Use dry white wine if mirin (or sake) is not available
- Try also lettuce leaves instead of parchment paper for a more natural cooking…
