Spicy Roasted Potatoes and Onions

Ingredients (for 2)

  • 4 small potatoes
  • 1 onion
  • 1 tbsp mint
  • 1 tsp cumin seeds
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • salt & black pepper



  • Preheat the oven to 350 °F (180 °C)
  • Peel the potatoes, wash them and remove any black dots; drain on paper towels
  • Slice them and put them in a large bowl
  • Sprinkle with salt and black pepper, and drizzle with some olive oil; toss well so that potatoes are well coated with oil
  • Place the potatoes in a glass baking dish or roasting pan and spread evenly to form one layer
  • Slice the onions and lay them on top of the potatoes
  • Continue with more layers of potatoes and onions, finishing with a layer of potatoes, and add some more oil on top
  • Place in the oven and roast for 40 minutes, stirring frequently
  • Take out of the oven, sprinkle with the cumin seeds, chopped mint leaves and the lemon juice, stir well and roast for another 5 minutes until golden brown
