Potatoes roasted in the oven with a layer of onions and spices, a Middle Eastern staple…
Ingredients (for 2)
- 4 small potatoes
- 1 onion
- 1 tbsp mint
- 1 tsp cumin seeds
- 2 tbsp olive oil
- 1 tbsp lemon juice
- salt & black pepper
Directions
- Preheat the oven to 350 °F (180 °C)
- Peel the potatoes, wash them and remove any black dots; drain on paper towels
- Slice them and put them in a large bowl
- Sprinkle with salt and black pepper, and drizzle with some olive oil; toss well so that potatoes are well coated with oil
- Place the potatoes in a glass baking dish or roasting pan and spread evenly to form one layer
- Slice the onions and lay them on top of the potatoes
- Continue with more layers of potatoes and onions, finishing with a layer of potatoes, and add some more oil on top
- Place in the oven and roast for 40 minutes, stirring frequently
- Take out of the oven, sprinkle with the cumin seeds, chopped mint leaves and the lemon juice, stir well and roast for another 5 minutes until golden brown
