Spicy Mango Orange Pork

Ingredients (for 2)

  • 1 pork tenderloin steak (about 5-6 oz.)
  • 1/2 mango
  • 1/4 tsp Chinese five-spice powder
  • 1/2 cup orange juice
  • 1/2 bell pepper
  • 2 tbsp rice wine
  • 1 tbsp rice vinegar
  • 2 tbsp honey
  • 2 tbsp cashew nuts
  • 1/2 tbsp cornstarch
  • 1 tsp ginger
  • 1 tsp sesame oil
  • 1/2 tbsp soy sauce
  • 1/2 scallion
  • 1 tbsp peanut oil
  • 1 garlic clove
  • salt, pepper & chili as desired

Directions

  • Wash, deseed and chop peppers, and set aside
  • Heat oil in a skillet over high heat then add garlic, saute for 2 minutes until fragrant
  • Add pork, pepper and salt, and stir fry for 1 minute
  • Put in peppers and cook for 2-3 minutes then remove from skillet and set aside
  • Add orange juice to skillet and boil until it reduces by half
  • Put in rice wine, honey, soy sauce, ginger, vinegar, chili, sesame oil and bouillon
  • Cook for 3-5 minutes, then add cooked pork to mixture
  • Dissolve cornstarch in water and add to pot, then add mangoes (chopped) and cook for another minute
  • Serve hot!
