Ingredients (for 2)
- 4 chicken thighs
- 6 tbsp corn flour
- 1 chipotle
- 1 cup oil for frying
- 1 tsp red Tabasco sauce
- 1/4 tsp chili powder
- 1/4 tsp paprika
- 1 tbsp honey
- 1/2 tsp peppercorn
- 2 cups water
- 1/2 tbsp brown sugar
- 1 garlic clove
- 1/2 onion
- salt & black pepper
Directions
- Put water, salt, honey, chili powder and sugar in a large bowl to make brine
- Mix to combine then put in garlic, Tabasco sauce, peppercorns and onions
- Place chicken into brine, cover and put in fridge ideally overnight (make sure brine covers meat, add water if necessary)
- Take chicken from refrigerator and remove from brine; use paper towels to pat dry
- Combine flour, pepper, chipotle, salt and paprika in a bowl; roll chicken in mixture making sure to press meat into flour
- Let meat sit in flour for 10 minutes then roll in flour again and press to get a proper coating
- Heat oil in a cast iron skillet and deep fry chicken for 7-8 minutes until golden
- Remove chicken from pan and drain; serve with desired side dish and enjoy!
