Ingredients (for 2)
- 8 slices smoked salmon (about 7-8 oz.)
- 1 avocado
- 1 tbsp dill
- 1 tsp grated ginger
- 1 lemon
- 4 tbsp olive oil
- salt & pepper
Directions
- Wash, peel and thinly slice the lemon zest
- Squeeze the juice in a bowl and add the zest, grated ginger, olive oil and salt; stir well to blend
- Arrange slices of salmon on a serving plate
- Drizzle with some of the lemon dressing
- Peel, pit and slice avocados
- Top salmon with 2-3 slices of avocado
- Drizzle with remaining dressing and season with pepper and dill
