Skewered Thai Pork

Ingredients (for 2)

  • 1 large pork chop (about 180 gr. or 6 oz.)
  • 1 tbsp fish sauce
  • 1/3 cup coconut milk
  • 1/2 tbsp white sugar
  • 1 garlic clove
  • 3 tbsp peanut oil
  • a pinch of salt

Directions

  • Take a medium-sized bowl and blend together sugar, salt, minced garlic, fish sauce, and coconut milk
  • Cut the pork chop in strips of the same size and dip them in the mixture, coating them thoroughly
  • Cover the bowl and marinate for at least 30 minutes, but preferably overnight in the fridge
  • Soak the skewers in cold water in the meantime
  • Thread the pork strips onto the skewers
  • Heat the oil in a large skillet and cook the skewers for about 3 to 5 minutes per side, until browned

Tips from the Chef

  • In the original Thai recipe, bamboo skewers are used
  • When using wood skewers, always soak them in water for at least 15-20 minutes before use to prevent them catching fire
