Shrimp and Avocado Salad

Ingredients (for 2)

  • 1/2 cup shrimps
  • 1 avocado
  • romaine lettuce (about 120 gr or 4 oz)
  • 1/4 cup cherry tomatoes
  • 1/2 tbsp lemon juice
  • 1 tbsp parsley
  • 2 tbsp olive oil
  • salt & black pepper


  • Prepare marinade by combining lemon juice, parsley, oil, pepper and salt
  • Put shrimp into marinade and stir, coat shrimp thoroughly
  • Cover and refrigerate for 2 hours
  • Wash lettuce and pat dry
  • Slice avocado and cherry tomatoes and place on top of the lettuce
  • Add the shrimp, sprinkle some of the marinade over the salad and serve

  • You can add sweet corn or shredded carrots for a milder taste
