Ingredients (for 2)
- 1/2 cup shrimps
- 1 avocado
- romaine lettuce (about 120 gr or 4 oz)
- 1/4 cup cherry tomatoes
- 1/2 tbsp lemon juice
- 1 tbsp parsley
- 2 tbsp olive oil
- salt & black pepper
Directions
- Prepare marinade by combining lemon juice, parsley, oil, pepper and salt
- Put shrimp into marinade and stir, coat shrimp thoroughly
- Cover and refrigerate for 2 hours
- Wash lettuce and pat dry
- Slice avocado and cherry tomatoes and place on top of the lettuce
- Add the shrimp, sprinkle some of the marinade over the salad and serve
