Ingredients (for 2)
- 2 small zucchini
- 1/2 shallot
- 1 garlic clove
- 1 tbsp parsley
- 2 tbsp olive oil
- salt
Directions
- Dice the shallots and stir fry in olive oil until golden brown
- Cut the zucchini in slices and add them to the shallots with the crushed garlic cloves
- Cook at medium heat stirring frequently for about 8 minutes
- Add some water if necessary to prevent the vegetables from sticking to the pan
- Sprinkle with parsley and season with a pinch of salt & pepper
