Sauteed Zucchini

Easy and quick summer recipe, use shallots instead of regular onions for a smoother taste…

Ingredients (for 2)

  • 2 small zucchini
  • 1/2 shallot
  • 1 garlic clove
  • 1 tbsp parsley
  • 2 tbsp olive oil
  • salt

Directions

  • Dice the shallots and stir fry in olive oil until golden brown
  • Cut the zucchini in slices and add them to the shallots with the crushed garlic cloves
  • Cook at medium heat stirring frequently for about 8 minutes
  • Add some water if necessary to prevent the vegetables from sticking to the pan
  • Sprinkle with parsley and season with a pinch of salt & pepper

Best Served With

Grilled chicken breast with just a touch of lemon juice
