Ingredients (for 2)
- 1 zucchini
- 1 bell pepper
- 1/2 cup cherry tomatoes
- 1/4 onion
- 1 garlic clove
- 1 tbsp parsley
- 2 tbsp olive oil
- salt & black pepper
Directions
- Chop or slice the onions, zucchini, peppers and tomatoes (cherry tomatoes are very convenient since you don’t need to peel or deseed them)
- Take a large frying pan and stir fry the onions and garlic (crushed) in olive oil until golden brown
- Add the vegetables and cook at medium heat, stirring frequently, for about 8 minutes
- Add some water if needed to prevent the vegetables from sticking to the pan
- Sprinkle with parsley and season with a pinch of salt & pepper

Any grilled meat or fish course and white rice.
