Sauteed Summer Veggies

Colorful, fresh and vitamin-packed summer side, ideal complement to a nice barbecue…

Ingredients (for 2)

  • 1 zucchini
  • 1 bell pepper
  • 1/2 cup cherry tomatoes
  • 1/4 onion
  • 1 garlic clove
  • 1 tbsp parsley
  • 2 tbsp olive oil
  • salt & black pepper


  • Chop or slice the onions, zucchini, peppers and tomatoes (cherry tomatoes are very convenient since you don’t need to peel or deseed them)
  • Take a large frying pan and stir fry the onions and garlic (crushed) in olive oil until golden brown
  • Add the vegetables and cook at medium heat, stirring frequently, for about 8 minutes
  • Add some water if needed to prevent the vegetables from sticking to the pan
  • Sprinkle with parsley and season with a pinch of salt & pepper

Best Served With

Any grilled meat or fish course and white rice.
