Roasted Potatoes (French style)

French variation of the classic roasted potatoes, using thyme and marjoram…

Ingredients (for 2)

  • 4 potatoes
  • 2 tsp thyme
  • 1 tsp marjoram
  • 4 tbsp olive oil
  • salt & black pepper


  • Preheat oven to 350 °F (180 °C)
  • Peel the potatoes, wash them and remove any black dots; drain on paper towels
  • Cut the potatoes into bite-size chunks or wedges and put them in a large bowl
  • Sprinkle with salt, black pepper, thyme and marjoram (finely chopped)
  • Drizzle with olive oil and toss well so that the potatoes are well coated with oil
  • Place them in a glass baking dish or roasting pan; spread evenly to form one layer
  • Roast in the oven for 45 minutes, or until golden brown, stirring from time to time
