Prosciutto Stuffed Artichokes

Artichokes, just like peppers, are perfect for stuffing… in this recipe with Parma ham and mushrooms, but you can add your favorite ingredients to the mix!

Ingredients (for 2)

  • 4 artichokes
  • 4 slices Parma ham (prosciutto)
  • 2 slices sandwich bread
  • 2 tbsp dried mushrooms
  • 1/2 onion
  • 1/2 garlic clove
  • 2 tbsp parsley
  • 2 tbsp olive oil
  • salt & black pepper


  • Soak the mushrooms in cold water for 15 minutes
  • In the meantime, prepare the artichokes: slice off the tip, pull off the outer leaves, cut the stem and remove the fuzzy part inside
  • Peel the onion and the garlic cloves, and set them aside
  • Preheat the oven to 400 °F (200 °C)
  • Using an electric blender, mix together mushrooms (drained), Parma ham, onion, garlic, parsley, sandwich bread (coarsely chopped), salt and pepper
  • Stuff each artichoke with the filling, pour the olive oil on top and cook in the oven for about 25 minutes, until nicely browned and crusty
  • Serve warm, not hot…
