Artichokes, just like peppers, are perfect for stuffing… in this recipe with Parma ham and mushrooms, but you can add your favorite ingredients to the mix!
Ingredients (for 2)
- 4 artichokes
- 4 slices Parma ham (prosciutto)
- 2 slices sandwich bread
- 2 tbsp dried mushrooms
- 1/2 onion
- 1/2 garlic clove
- 2 tbsp parsley
- 2 tbsp olive oil
- salt & black pepper
Directions
- Soak the mushrooms in cold water for 15 minutes
- In the meantime, prepare the artichokes: slice off the tip, pull off the outer leaves, cut the stem and remove the fuzzy part inside
- Peel the onion and the garlic cloves, and set them aside
- Preheat the oven to 400 °F (200 °C)
- Using an electric blender, mix together mushrooms (drained), Parma ham, onion, garlic, parsley, sandwich bread (coarsely chopped), salt and pepper
- Stuff each artichoke with the filling, pour the olive oil on top and cook in the oven for about 25 minutes, until nicely browned and crusty
- Serve warm, not hot…
