An easy to prepare soup with tomatoes, prawns and a soft touch of Asian taste!
Ingredients (for 2)
- 1 cup prawns
- 4 ripe red tomatoes
- 1 tsp ginger
- 1 tbsp lemongrass
- 2 tsp red pepper flakes
- 1 tsp thyme
- 2 tbsp butter
- 2 tbsp olive oil
- salt & black pepper
Directions
- Take a deep sauce pan and bring water to boil
- Wash the tomatoes, boil them for few seconds, reserve to a platter and peel their skin off by cutting a small cross in their bottom edge with a sharp knife
- In a bowl, add the diced tomato pulp, some hot water from the sauce pan, season with salt and paper and mix well with an electric blender until even (if the sauce is too thick add some more hot water)
- In a skillet, heat the butter and when bubbling add the finely sliced lemongrass and minced ginger; sauté for few minutes until tender
- Add the prawns to the skillet and brown at high temperature on all sides for 3 minutes; season with salt and reserve prawns to a platter
- Pour the tomato sauce into the skillet, add the red pepper flakes and cook for 10 minutes, adding the thyme when done
- Add some water or vegetable stock if necessary
- Pour the tomato sauce in your favorite platter, garnish the dish with the prawns on top of it and drizzle some olive oil!
