Poulet Frites

The original recipe for French Poulet Frites! Served in almost every restaurant and bistrot in the country, sided by French fries of course!

Ingredients (for 2)

  • 1 chicken thigh
  • 1 chicken wing
  • 1/2 chicken breast
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 2 tbsp butter
  • salt & black pepper


  • Preheat oven to 400 °F (200 °C)
  • Peel and cut into halves the garlic cloves and rub the chicken pieces all over
  • Place the pieces, skin side up, on a baking sheet or pan
  • Brush them with olive oil and then season with salt and black pepper
  • Bake for about 20 minutes
  • Turn over the chicken and spread ½ of the butter with a knife over the top; cook for 20 minutes more
  • Repeat with remaining butter, regularly basting the chicken, and cook for 20 minutes more or until crispy outside and tender and juicy inside
