A simple and delicate recipe that really brings out the fantastic flavor of Porcini mushrooms!
Ingredients (for 2)
- 1 cup porcini mushrooms
- 1/4 cup beef stock
- 2 tbsp parsley
- 1 tbsp butter
- 1 garlic clove
- 2 tbsp olive oil
- salt & black pepper
Directions
- Remove any black dots from the stems of the mushrooms and gently clean them with some moist kitchen paper; do not wash under running water or you will remove part of their flavor
- Chop the mushrooms in bite sized pieces and set aside
- Coarsely chop and mix garlic, parsley, olive oil and salt
- Add the mixture to a deep saucepan and sauté over medium heat for a couple of minutes
- Add the mushrooms and cook uncovered at low heat until all water has evaporated
- Add the beef stock and the butter, and cook for 5 minutes more
