Coat pineapple chunks with sugar and butter and pair with ice cream and graham crackers for a creative twist on the famous pineapple upside cake dessert. Your taste buds will not be disappointed and it takes less than 30 minutes to put together…
Ingredients (for 2)
- 1/2 cup pinapple
- 1/2 cup vanilla ice cream
- 1/2 tbsp honey
- 1/2 cup whipping cream
- 1/2 tbsp brown sugar
- a handful of cherries
- 3-4 crackers
- 1/4 tsp cinnamon
- 1 tbsp butter
Directions
- Heat a small skillet and melt the butter
- Add honey, cinnamon and sugar, and stir to combine; cook until sugar dissolves
- Add pineapple and give it another stir; cook for 2-3 minutes or until thoroughly heated
- Put ice-cream into dish and crumble graham crackers on top then add pineapple, whipped cream and cherry
- Serve right away and enjoy!
