Pineapple Upside Down Cake Sundaes

Coat pineapple chunks with sugar and butter and pair with ice cream and graham crackers for a creative twist on the famous pineapple upside cake dessert. Your taste buds will not be disappointed and it takes less than 30 minutes to put together…

Ingredients (for 2)

  • 1/2 cup pinapple
  • 1/2 cup vanilla ice cream
  • 1/2 tbsp honey
  • 1/2 cup whipping cream
  • 1/2 tbsp brown sugar
  • a handful of cherries
  • 3-4 crackers
  • 1/4 tsp cinnamon
  • 1 tbsp butter


  • Heat a small skillet and melt the butter
  • Add honey, cinnamon and sugar, and stir to combine; cook until sugar dissolves
  • Add pineapple and give it another stir; cook for 2-3 minutes or until thoroughly heated
  • Put ice-cream into dish and crumble graham crackers on top then add pineapple, whipped cream and cherry
  • Serve right away and enjoy!
