Turn plain simple pancakes into a sweet dessert with the addition of lemon juice and sugar… you can also top it with your favorite choice of fruit.
Ingredients (for 2)
- 1 cup wheat flour
- 1 egg
- 1 cup milk
- 2 tbsp butter
- 2 tbsp lemon juice
- 1 tsp baking powder
- 2 tbsp white sugar
- 1/2 tbsp powdered sugar
- a pinch of salt
Directions
- Take a small sauce pan and melt butter over low heat
- In a different bowl mix together flour, salt, baking powder and sugar
- Make a well in the middle of the flour mixture and add beaten egg and lemon juice
- Pour melted butter and milk, and stir well to combine
- Heat a small nonstick pan over medium heat
- When hot, pour part of the pancake mixture into the pan and spread evenly
- When the upper side of the pancake is bubbling, turn over and cook 1 minute more
- Reserve to a platter, sprinkle with abundant powdered sugar and serve!
Tips from the Chef
- If you are in a rush, just put all ingredients for the pancake mixture into a blender and pulse until smooth
- Pour enough mixture into the pan to have a nice soft thickness
