Palak Paneer

Popular Punjabi vegetarian recipe made with paneer (cottage cheese) and fresh spinach. Delicious also with different combinations of vegetables, such as mustard leaves, broccoli or other leafy greens...

Ingredients (for 2)

  • 1/2 cup cottage cheese
  • 6 cups fresh spinach
  • 1/4 can tomato sauce
  • 1/4 onion
  • 2 tbsp cooking cream
  • 1/4 chili pepper
  • 1/2 tsp garam masala powder
  • 2 tbsp olive oil
  • 1 garlic clove
  • 1 tsp ginger
  • 1/2 tsp cumin seeds
  • 2 tbsp fresh cilantro
  • 1 tbsp rock salt
  • 1 cup water

Directions

  • Wash and drain the spinach, remember to cut off and discard the thick stems
  • Boil it in salted water for about 5-6 minutes, drain and put it in a food processor together with the cream and tomato sauce
  • Pulse to get a smooth spinach cream and set it aside
  • Slice the paneer into small cubes and finely chop the onions and the garlic cloves
  • Heat the oil in a saucepan and stir fry the paneer, together with onion, garlic and cumin seeds, at high heat for a couple of minutes
  • Stir in the spinach cream, add ginger (grated) and garam masala, and simmer for 10 minutes
  • Add water a bit at a time to get the desired consistency and stir frequently
  • Garnish with fresh coriander leaves and green chilies just before serving
