Pad See Ew

Stir fried noodle dish, very popular in Laos and Thailand. The original recipe requires flat rice noodles and Chinese broccoli, but you can use different varieties as well...

Ingredients (for 2)

  • 1 cup rice noodles
  • 1/2 cup ground pork
  • 1 cup broccoli
  • 1 egg
  • 1 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 1 tbsp white sugar

Directions

  • Soak the noodles in boiling water for 3-4 minutes, stir to loosen them up
  • Drain, cut them into shorter pieces and set aside
  • Chop the broccoli into bite-size pieces
  • Heat the oil in a wok or large skillet, add the garlic cloves (crushed) and the ground pork, and stir fry until brown
  • Add the rice noodles, broccoli, soy sauce (both normal and dark) and sugar
  • Cook at high heat for about 5 minutes (covered), stirring frequently
  • Break the eggs in the middle of the wok and scramble to mix them with the noodles
  • Once the eggs are cooked, turn off the heat and serve
  • If you like you can spice it up with fresh chili peppers
