Original Italian Polpettone (Meatloaf)

Meatloaf is a very popular dish all over the world. Perfect for leftovers, easy to prepare and nutritious. This is how we do it in Italy…

Ingredients (for 2)

  • 2 cups ground beef
  • 4 slices mortadella (about 3 oz.)
  • 4 tbsp grated Parmesan cheese
  • 1/2 cup bread crumbs
  • 1/2 cup milk
  • 1/2 tsp nutmeg
  • 2 tbsp parsley
  • 1 egg
  • 2 tbsp olive oil
  • salt & pepper

Directions

  • Preheat the oven to 380 °F (180 °C)
  • Soak breadcrumbs in a bowl with milk (use dry traditional bread crumbs if available)
  • In a large bowl add ground beef, minced mortadella slices, soaked breadcrumbs and nutmeg, and mix well
  • Beat eggs in a shallow plate, season with salt and black pepper and pour over the mixture
  • Add freshly chopped parsley and grated Parmesan cheese
  • Mix thoroughly with clean hands or a fork
  • Grease a shallow baking pan or loaf pan with some olive oil
  • Shape the meat mixture into a long meatloaf and place on the baking pan
  • Insert in the oven (medium rack) and bake for about 40-45 minutes, turning once
  • When the meatloaf is ready, remove to a cutting board, let cool a few minutes and then cut in slices
  • Arrange slices on a serving platter and add your favorite side
