Loaded Potato Soup

Ingredients (for 2)

  • 2 large potatoes
  • 2 cup chicken stock
  • 1/2 cup cheddar cheese
  • 2 bacon slices
  • 1/2 tbsp sour cream
  • 1 cup milk
  • 1/4 onion
  • 1/2 scallion
  • 2 tbsp olive oil
  • 1/2 tbsp corn starch
  • salt & pepper

Directions

  • Use a fork to poke potatoes all over then put into a microwavable dish; cook on high for 15 minutes, then slice into halves and put aside to cool
  • Heat oil in saucepan and cook onions for 3 minutes, then put in broth
  • Combine milk and cornstarch, add to pan and allow to boil, stirring frequently, for 1-2 minutes
  • Take pan from heat and add salt, pepper and sour cream
  • Put bacon into a microwavable dish and cook for 8-10 minutes, remove from heat and crumble
  • Remove skins from potatoes and mash coarsely then mix into soup; serve topped with scallions, bacon and cheese!
