Ingredients (for 2)
- 2 large potatoes
- 2 cup chicken stock
- 1/2 cup cheddar cheese
- 2 bacon slices
- 1/2 tbsp sour cream
- 1 cup milk
- 1/4 onion
- 1/2 scallion
- 2 tbsp olive oil
- 1/2 tbsp corn starch
- salt & pepper
Directions
- Use a fork to poke potatoes all over then put into a microwavable dish; cook on high for 15 minutes, then slice into halves and put aside to cool
- Heat oil in saucepan and cook onions for 3 minutes, then put in broth
- Combine milk and cornstarch, add to pan and allow to boil, stirring frequently, for 1-2 minutes
- Take pan from heat and add salt, pepper and sour cream
- Put bacon into a microwavable dish and cook for 8-10 minutes, remove from heat and crumble
- Remove skins from potatoes and mash coarsely then mix into soup; serve topped with scallions, bacon and cheese!
