Ingredients (for 2)
- 4 tbsp lemon juice
- 4 tbsp white sugar
- 2 eggs
- 1/2 cup milk
- 1 tbsp butter
- 2 tbsp wheat flour
- 1 tsp powdered sugar
Directions
- Preheat the oven to 350 °F (180 °C)
- Brush your ramekins or soufflé dishes with butter and lightly dust with a little sugar to coat sides and bottom
- Heat lemon juice with milk in a small saucepan
- Add half of the sugar and the flour, and stir until both have dissolved
- Turn off the heat, stir in the egg yolks (save the whites aside) and mix until you get a smooth cream
- In a bowl, beat the egg whites with the remaining sugar, using an electric blender, until soft and foamy
- Combine the cream with the egg whites and pour the mixture into the ramekins
- Line a baking sheet with parchment paper and bake the soufflés for 15 minutes, until golden
- Dust with powdered sugar just before serving
