Ingredients (for 2)

  • 4 tbsp lemon juice
  • 4 tbsp white sugar
  • 2 eggs
  • 1/2 cup milk
  • 1 tbsp butter
  • 2 tbsp wheat flour
  • 1 tsp powdered sugar


  • Preheat the oven to 350 °F (180 °C)
  • Brush your ramekins or soufflé dishes with butter and lightly dust with a little sugar to coat sides and bottom
  • Heat lemon juice with milk in a small saucepan
  • Add half of the sugar and the flour, and stir until both have dissolved
  • Turn off the heat, stir in the egg yolks (save the whites aside) and mix until you get a smooth cream
  • In a bowl, beat the egg whites with the remaining sugar, using an electric blender, until soft and foamy
  • Combine the cream with the egg whites and pour the mixture into the ramekins
  • Line a baking sheet with parchment paper and bake the soufflés for 15 minutes, until golden
  • Dust with powdered sugar just before serving
