Lemon Rice

Typical South Indian side dish, perfect for leftover rice as well. You can personalize it with different ingredients and add your favorite choice of vegetables…

Ingredients (for 2)

  • 1 cup basmati rice
  • 1 lemon
  • 1 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1 tsp ginger
  • 1/2 tsp turmeric
  • 2 tbsp coriander / cilantro
  • 1 tbsp peanuts
  • 2 tbsp vegetable oil
  • chili peppers (as desired)
  • rock salt

Directions

  • Rinse the basmati rice under cold water a few times
  • Boil the rice in salted water according to package directions, approximately 8-10 minutes; when cooked through but slightly firm to the bite, drain and set aside
  • Heat vegetable oil or ghee in a large nonstick pan
  • Add cumin seeds, mustard seeds, turmeric, ginger and chopped (or crushed) peanuts, and cook about 1 minute until aromatic
  • Add the rice, squeeze lemon juice on top and give it a good stir
  • Turn off the heat, cover with a lid and let it rest a couple of minutes
  • Garnish with fresh coriander leaves and chopped chilies just before serving
