Typical South Indian side dish, perfect for leftover rice as well. You can personalize it with different ingredients and add your favorite choice of vegetables…
Ingredients (for 2)
- 1 cup basmati rice
- 1 lemon
- 1 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1 tsp ginger
- 1/2 tsp turmeric
- 2 tbsp coriander / cilantro
- 1 tbsp peanuts
- 2 tbsp vegetable oil
- chili peppers (as desired)
- rock salt
Directions
- Rinse the basmati rice under cold water a few times
- Boil the rice in salted water according to package directions, approximately 8-10 minutes; when cooked through but slightly firm to the bite, drain and set aside
- Heat vegetable oil or ghee in a large nonstick pan
- Add cumin seeds, mustard seeds, turmeric, ginger and chopped (or crushed) peanuts, and cook about 1 minute until aromatic
- Add the rice, squeeze lemon juice on top and give it a good stir
- Turn off the heat, cover with a lid and let it rest a couple of minutes
- Garnish with fresh coriander leaves and chopped chilies just before serving
