Lamb Chops in Balsamic Reduction

Ingredients (for 2)

  • 4-6 lamb chops (depending on how hungry you are!)
  • 4 tbsp balsamic vinegar
  • 1/2 cup vegetable stock
  • 1 tbsp butter
  • 2 tbsp olive oil
  • 1 tsp thyme
  • 1/2 tbsp rosemary leaves
  • 1/4 shallot
  • salt & black pepper

Directions

  • In a shallow plate mix together the dried herbs with salt and black pepper
  • Brush the mixture on both sides of the lamb chops or dip the lamb into the plate
  • Heat olive oil in a nonstick griddle pan or skillet over medium heat
  • Add lamb chops and cook for 3-4 minutes per side
  • When the lamb is ready, remove it to a plate and cover to keep it warm
  • Thinly slice the shallot, add them to the pan and sauté for 2 minutes
  • Add balsamic vinegar, stir well and scrape any meat sticked to the bottom of the pan
  • Stir in vegetable stock and simmer at medium high heat until reduced by half (about 10-12 minutes)
  • Remove from heat, add butter and let it melt
  • Pour the balsamic reduction on the lamb and serve
