Kofta kebabs are a Middle Eastern classic. They are traditionally prepared using ground lamb but you can use a mixture of beef and pork meat as well, if lamb is not available. The mix of spices with garlic and onions makes their flavor unique!
Ingredients (for 2)
- 2 cups ground lamb (about 10 oz or 300 gr)
- 1/2 onion
- 1/2 tsp cinnamon
- 2 garlic cloves
- 1 tsp coriander seeds
- 1/2 tsp cumin seeds
- 1 tbsp parsley
- 1 tsp ginger
- salt & black pepper
Directions
- Soak skewers in water for at least 15-20 minutes
- In the meantime, mince the garlic and add it to a bowl with ground lamb
- Grate and add onions
- Stir in spices: freshly chop parsley, grated ginger, cumin, coriander and cinnamon
- Season with salt and black pepper, and blend well
- Refrigerate for about 1 hour
- With your hands, shape meat into long-shaped balls
- Spear meat balls with skewers and place on a baking sheet
- Broil in oven at high heat for 10-15 minutes or on an outdoor grill until nicely roasted!

Yogurt, pita bread, green salad and cucumbers
Tips from the Chef
If you have enough time, refrigerate the kebabs for 3-4 hours before cooking, the longer the better! You can brush the kebabs with some olive oil for extra taste
