Kofta Kebabs

Kofta kebabs are a Middle Eastern classic. They are traditionally prepared using ground lamb but you can use a mixture of beef and pork meat as well, if lamb is not available. The mix of spices with garlic and onions makes their flavor unique!

Ingredients (for 2)

  • 2 cups ground lamb (about 10 oz or 300 gr)
  • 1/2 onion
  • 1/2 tsp cinnamon
  • 2 garlic cloves
  • 1 tsp coriander seeds
  • 1/2 tsp cumin seeds
  • 1 tbsp parsley
  • 1 tsp ginger
  • salt & black pepper

  • Soak skewers in water for at least 15-20 minutes
  • In the meantime, mince the garlic and add it to a bowl with ground lamb
  • Grate and add onions
  • Stir in spices: freshly chop parsley, grated ginger, cumin, coriander and cinnamon
  • Season with salt and black pepper, and blend well
  • Refrigerate for about 1 hour
  • With your hands, shape meat into long-shaped balls
  • Spear meat balls with skewers and place on a baking sheet
  • Broil in oven at high heat for 10-15 minutes or on an outdoor grill until nicely roasted!

Best Served With

Yogurt, pita bread, green salad and cucumbers

Tips from the Chef

If you have enough time, refrigerate the kebabs for 3-4 hours before cooking, the longer the better! You can brush the kebabs with some olive oil for extra taste
