Hummus

Ingredients (for 2)

  • 2 cups chickpeas
  • 1 tbsp sesame seeds
  • 1/2 tsp cumin seeds
  • 1 tbsp lemon juice
  • 4 tbsp olive oil
  • 1/2 garlic clove
  • salt

Directions

  • Start by preparing the Tahini paste: preheat the oven to 400 °F (190 °C)
  • Take a baking sheet or flat pan and spread out sesame seeds evenly
  • Bake in oven for 4-5 minutes, but pay attention not to brown the seeds
  • Remove from oven and add to a food processor with a few drops of olive oil
  • Pulse and add some more oil; continue until you get a smooth paste
  • Add lemon juice and blend for 1 minute more
  • Scrape sides and bottom of the food processor with a spatula and add: minced garlic, cumin, salt and remaining olive oil; blend for 30 seconds more
  • Open the canned chickpeas, drain liquid and rinse under running water
  • Add half of the chickpeas to the food processor and blend for 1 minute
  • Scrape sides and bottom of the food processor with a spatula and add remaining chickpeas
  • Blend for 1-2 minutes more or until smooth and creamy

Tips from the Chef

  • We suggest using canned chickpeas to reduce cooking time
  • To adjust the consistency of the cream you can add a sip of water and continue mixing to the desired thickness
  • Try adding a dash of ground paprika as final touch
