Ingredients (for 2)
- 2 cups macaroni (about 180 gr or 6 oz)
- 1 tbsp mustard
- 1 tbsp honey
- 1/2 tbsp lemon juice
- 2 tbsp pine nuts (optional)
- 2 tbsp grated Parmesan cheese
- 1/4 cucumber
- 1/2 tsp red pepper flakes
- 1/2 tsp oregano
- 1 tbsp olive oil
- salt & black pepper
Directions
- Cook pasta as directed on package without salt, then drain
- Rinse under cold water, drain and put aside till needed
- Mix together lemon juice, mustard, oil, honey, oregano, salt and pepper
- Put pasta into a bowl along with cucumber, red pepper flakes, Parmesan cheese and pine nuts
- Pour mustard mixture over pasta and toss well
- Refrigerate and serve (cool but not cold)
