Ham and Potato Soup

This is a simple hearty soup that can be easily adapted to a number of different ingredients… great for those cold winter or rainy days and super easy to prepare!

Ingredients (for 2)

  • 2 potatoes
  • 3 or 4 slices ham (about 3 oz. or 80 gr.)
  • 1 cup milk
  • 1 tbsp potato flour
  • 2 tbsp butter
  • 1/2 onion
  • 1 stalk celery
  • 1 cube bouillon
  • 2 cups water
  • salt & black pepper

Directions

 

  • Coarsely chop celery, ham and onion, and place in a large stockpot with water
  • Peel the potatoes and add to the stockpot
  • Cook for 15 minutes over medium heat, then add pepper, salt and bouillon; stir to combine
  • Heat a saucepan and melt butter, then add flour and whisk until mixture thickens
  • Pour in milk and continue whisking, try to avoid lumps; cook for 5 minutes stirring frequently
  • Add mixture to the stockpot and whisk to combine; cook soup for 15 minutes until heated thoroughly
  • Serve right away and enjoy!
