This is a simple hearty soup that can be easily adapted to a number of different ingredients… great for those cold winter or rainy days and super easy to prepare!
Ingredients (for 2)
- 2 potatoes
- 3 or 4 slices ham (about 3 oz. or 80 gr.)
- 1 cup milk
- 1 tbsp potato flour
- 2 tbsp butter
- 1/2 onion
- 1 stalk celery
- 1 cube bouillon
- 2 cups water
- salt & black pepper
Directions
- Coarsely chop celery, ham and onion, and place in a large stockpot with water
- Peel the potatoes and add to the stockpot
- Cook for 15 minutes over medium heat, then add pepper, salt and bouillon; stir to combine
- Heat a saucepan and melt butter, then add flour and whisk until mixture thickens
- Pour in milk and continue whisking, try to avoid lumps; cook for 5 minutes stirring frequently
- Add mixture to the stockpot and whisk to combine; cook soup for 15 minutes until heated thoroughly
- Serve right away and enjoy!
