This recipe is for those who love to grill! The salmon is complemented with a fresh corn salad and a dressing that is to die for. Cilantro, with its unique flavour, will make this dish a hit, great for barbecues or camping.
Ingredients (for 2)
- 2 fresh salmon fillets (about 5-6 oz. each)
- 1/2 cup sweet fresh corn
- 2 tbsp cilantro
- half tomato
- 1/2 tbsp mayonnaise
- 1 tbsp lemon juice
- half onion
- 2 tbsp white yogurt
- 1/2 tbsp honey
- 1/2 chipotle
- 1/2 tsp cumin seeds
- 2 tbsp olive oil
Directions
- Put lemon juice, oil, cumin, mayonnaise, yogurt, honey, cilantro and chipotle in a bowl
- Work the dressing with a spoon until combined, cover with plastic wrap and put in the fridge until needed
- Heat the grill, put the corn into a piece of foil with a drizzle of oil, place onto grill and cook for 15 minutes, turning it frequently
- Remove the corn from grill, cool and put into a bowl
- Add diced onion, chopped tomatoes and the dressing you prepared previously, and stir to combine
- Heat the grill, brush the salmon with oil along with black pepper and salt, and grill for 4-5 minutes on both sides (may need more time if salmon is thick)
- When ready, serve the corn salad topped with the salmon fillet
