Green Peppercorn Fillets

Ingredients (for 2)

  • 2 beef fillets (about 280 gr. or 10 oz.)
  • 2 tsp green peppercorn
  • 3 tbsp cooking cream
  • 2 tbsp butter
  • 1 tbsp brandy
  • 1/2 tbsp mustard
  • salt

Directions

  • Crush half of the peppercorns, cover both sides of the fillets and season with a pinch of salt
  • Melt the butter in a frying pan and cook the fillets at medium heat 2 minutes per side
  • Put aside the fillets in a dish
  • Add the brandy, the cooking cream and the mustard, cook gently, stirring frequently, until you have a nice creamy sauce
  • Add the fillets and let them absorb the flavor of the sauce at low heat for 2 minutes on both sides
  • Serve and garnish with the remaining half of the peppercorns
