Green Chicken Curry

Real easy and quick green curry recipe. If you do not have green curry paste you can use regular curry powder adding green jalapeno peppers...

Ingredients (for 2)

  • 4 chicken thighs
  • 1 tbsp green curry paste
  • 1/2 cup green beans
  • 1/2 cup coconut milk
  • 1 lime
  • 1/4 onion
  • 1 tbsp fish sauce
  • 2 tbsp olive oil
  • 1/2 tbsp brown sugar
  • 2 tbsp fresh cilantro
  • salt

Directions

  • Debone and cut the chicken thighs into pieces
  • Finely chop the onions
  • Heat the oil in a large skillet and stir fry the onions together with the green curry paste for a couple of minutes
  • Add the chicken, green beans, coconut milk and a pinch of salt
  • Stir, cover and simmer at low heat for about 20 minutes
  • Add water (or better yet chicken stock) if necessary to keep it moist and stir frequently
  • Finally add the fish sauce, lime juice, brown sugar and the fresh coriander leaves, and simmer for another 2-3 minutes

Steamed basmati or jasmine rice
