Real easy and quick green curry recipe. If you do not have green curry paste you can use regular curry powder adding green jalapeno peppers...
Ingredients (for 2)
- 4 chicken thighs
- 1 tbsp green curry paste
- 1/2 cup green beans
- 1/2 cup coconut milk
- 1 lime
- 1/4 onion
- 1 tbsp fish sauce
- 2 tbsp olive oil
- 1/2 tbsp brown sugar
- 2 tbsp fresh cilantro
- salt
Directions
- Debone and cut the chicken thighs into pieces
- Finely chop the onions
- Heat the oil in a large skillet and stir fry the onions together with the green curry paste for a couple of minutes
- Add the chicken, green beans, coconut milk and a pinch of salt
- Stir, cover and simmer at low heat for about 20 minutes
- Add water (or better yet chicken stock) if necessary to keep it moist and stir frequently
- Finally add the fish sauce, lime juice, brown sugar and the fresh coriander leaves, and simmer for another 2-3 minutes
