Green Beans and Potato Salad

Ingredients (for 2)

  • 2 cups green beans
  • 4 potatoes
  • 2 tbsp parsley
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • salt


  • Boil both the potatoes and the green beans in abundant salted water
  • Cooking time for potatoes depends on potato size, but you can expect about half an hour (use a fork to test softness)
  • Green beans should be crispy, which is about 15 minutes
  • Drain and allow to cool
  • Peel the potatoes and cut them into chunks
  • Add the green beans and parsley
  • Drizzle with olive oil and balsamic vinegar
