Ingredients (for 2)
- 2 cups green beans
- 4 potatoes
- 2 tbsp parsley
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- salt
Directions
- Boil both the potatoes and the green beans in abundant salted water
- Cooking time for potatoes depends on potato size, but you can expect about half an hour (use a fork to test softness)
- Green beans should be crispy, which is about 15 minutes
- Drain and allow to cool
- Peel the potatoes and cut them into chunks
- Add the green beans and parsley
- Drizzle with olive oil and balsamic vinegar
