A Greek classic! Use Kalamata olives and red onions for an authentic flavor…
Ingredients (for 2)
- romaine lettuce (about 120 gr or 4 oz)
- 1/2 cup feta cheese
- 1/4 cup black olives
- 1/4 cucumber
- 1/2 carrot
- 1/2 cup cherry tomatoes
- 1 garlic clove
- 1/4 onion
- 1/2 tbsp chives
- 1 tsp oregano
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- salt & black pepper
Directions
- Prepare the vinaigrette mixing olive oil, vinegar, oregano, chives, garlic (crushed) and a pinch of salt and pepper
- Cut the feta cheese into cubes and the cherry tomatoes into quarters
- Slice the cucumber, the carrots and the onions
- Prepare a bed of lettuce in a large bowl and add the rest of the ingredients
- Garnish with the pitted olives
- Pour the vinaigrette on the salad and serve
