Gnocchi alla Sorrentina

Ingredients (for 2)

  • 2 cups gnocchi
  • 1/2 cup mozzarella cheese
  • 2 tbsp fresh basil
  • 1 can tomato sauce (Italian passata)
  • 1 tbsp grated Parmesan cheese
  • 1 garlic clove
  • 2 tbsp olive oil
  • salt


  • Heat the olive oil in a saucepan over medium heat, add the crushed garlic and sauté for 3 minutes
  • Stir in the tomato sauce with a sip of water and salt, cover with a lid and cook, stirring from time to time, at low heat for 15 minutes
  • In the meantime, bring water with rock salt to boil in a deep saucepan and cook the gnocchi according to the package directions (as with every pasta recipe, water should be abundant)
  • Preheat your oven using the top broiling (grill)
  • Drain the gnocchi, place them on a baking tray, pour the tomato sauce (reserve some of it), freshly chopped basil, grated Parmesan cheese and coarsely chopped mozzarella, and stir to combine
  • Pour the remaining tomato sauce on top and broil in oven at high heat for 5 minutes, or until mozzarella starts to melt
  • Remove from oven, arrange in plates and serve warm!

It is important that heat in the oven comes from the top and at very high temperature because mozzarella has to melt and gnocchi have to get slightly crispy
