The original and unique recipe for dark chocolate muffins! Welcome to the dark side…
Ingredients (for 2)
- 1/3 cup dark chocolate
- 2 tbsp cocoa powder
- 4 tbsp brown sugar
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 egg
- 1 cup wheat flour
- 1 cup milk
- 2 tbsp butter
- salt
Directions
- Preheat oven to 375° F (180° C)
- Grease muffin molds with a little butter
- Coarsely chop the dark chocolate and set it aside
- Add the butter and half of the chopped chocolate in a bowl and melt over a saucepan of simmering water (so called bain-marie); remove from heat and set aside
- In a large bowl combine the all purpose flour, sugar, cocoa, salt and baking powder
- In a different bowl add milk and vanilla extract to beaten eggs and whisk vigorously to combine
- Melt butter in a small saucepan and stir it in the milk mixture
- Combine with the flour and the chocolate and mix well
- Finally stir in the remaining chocolate pieces
- Fill muffin molds with the mixture right to the top and bake for 20 minutes
- Immediately remove muffins from molds and cool for at least 5 minutes before serving

- To check if muffins are ready, insert a toothpick into the center: if it comes out clean, they are ready!
