Full Chocolate Muffins

The original and unique recipe for dark chocolate muffins! Welcome to the dark side…

Ingredients (for 2)

  • 1/3 cup dark chocolate
  • 2 tbsp cocoa powder
  • 4 tbsp brown sugar
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 egg
  • 1 cup wheat flour
  • 1 cup milk
  • 2 tbsp butter
  • salt

Directions

  • Preheat oven to 375° F (180° C)
  • Grease muffin molds with a little butter
  • Coarsely chop the dark chocolate and set it aside
  • Add the butter and half of the chopped chocolate in a bowl and melt over a saucepan of simmering water (so called bain-marie); remove from heat and set aside
  • In a large bowl combine the all purpose flour, sugar, cocoa, salt and baking powder
  • In a different bowl add milk and vanilla extract to beaten eggs and whisk vigorously to combine
  • Melt butter in a small saucepan and stir it in the milk mixture
  • Combine with the flour and the chocolate and mix well
  • Finally stir in the remaining chocolate pieces
  • Fill muffin molds with the mixture right to the top and bake for 20 minutes
  • Immediately remove muffins from molds and cool for at least 5 minutes before serving

Tips from the Chef

  • To check if muffins are ready, insert a toothpick into the center: if it comes out clean, they are ready!
