Fruit Tacos with Chocolate Tortillas

Ingredients (for 2)

  • 4 tbsp wheat flour
  • 8 tbsp all-purpose flour
  • 1/4 cup strawberries
  • 1/4 cup blueberries
  • 1/4 cup papayas
  • 1 kiwi
  • 1/4 mango
  • 1 tbsp cocoa powder
  • 1/4 tsp baking powder
  • 1 tbsp honey
  • 1/2 tbsp coconut oil
  • 1 tbsp lemon juice
  • a pinch of salt

Directions

  • Put flours, cocoa powder, salt and baking powder in a bowl and whisk to combine
  • Add honey, water and oil to dry mixture and use a wooden spoon to combine until dough forms
  • Place dough on a floured area and knead for 5 minutes, add flour if necessary
  • Form dough into small balls and set aside for 10 minutes
  • Use a floured rolling pin and roll the dough flat
  • Heat skillet, place tortilla into hot skillet and cook for 30 seconds; turn over and cook the other side
  • Repeat for each tortilla and set aside
  • Prepare fruits by washing and chopping as desired, then sprinkle with some lime juice
  • Lay tortilla on a plate and fill center with fruits, roll and serve!
